Recipe Day: Grilled Salmon with Mango Salsa
Time
- Prep Time: 20 minutes (mostly chopping the mangos)
- Cook Time: 10 minutes
Ingredients
- 1.5 pounds of salmon
- 1/3 cup olive oil
- 1 lemon's worth of lemon juice
- 10 chopped mint leaves
- 5 minced garlic cloves
- 1 tsp coriander
- 1/2 tsp cumin
- 1/2 tsp black pepper
- 1/4 tsp turmeric
- salt to taste
- 2 diced mangos
- 1/2 chopped cucumber
- 20 chopped mint leaves
- 1/4 cup chopped red onion
- 1/2 lemon's worth of lemon juice
Directions
- Prep Marinade: Mix oil, lemon juice, mint, garlic, and spices in a bowl.
- Prep Salsa: Mix mangos, cucumber, mint, red onion, and lemon juice in a bowl and refrigerate for later. Or, buy some mango salsa at the store so you don't have to learn how to cut around a mango core.
- Marinate salmon for 2 hours shallow dish in the fridge.
- Preheat grill to HIGH and take everything out of the fridge.
- Grill salmon normally, 3 - 5 minutes per side depending on how done you want it.
- Serve with spinach or rice.
